Toraja coffee has an aroma dominated by fragrances of spices, cinnamon with a dark chocolate aftertaste. Toraja beans undergo an exceptional traditional processing method in the Sulawesi region. The farmers cultivate the beans by hand using Gilling Basah or Wet Hull method to dry the beans faster in a rainy wet environment.
